Out of Town

Shops and supermarkets could be viewed as some sort of processing organ (ingesting stock, holding it temporarily and expelling it) in an urban environment. Traditionally this might be seen as a central organ, however now it might be a displaced peripheral organ, with the advent of 'out of town' shopping centres.
